A New Visitor!


We have a new visitor at Love and Life at Leadora!  Several nights ago, I found this praying mantis on our front door.  Then she came by to say "hello" again this afternoon.  I find her fascinating, especially since she is at least 3 inches long!  Do you suppose she's come by for recipes, decorating ideas and organizing tips?

Speaking of recipes, I tried a new one tonight, crunchy zucchini and tomatoes.  I am always trying to find ways to get MacGyver husband to eat vegetables, and he seemed to enjoy this one.  In this recipe, sliced zucchini and tomatoes are topped with panko bread crumbs, parmesan cheese, minced garlic and chopped basil.  Broil 1-2 minutes, and then this vegetable side dish is ready to serve. 

Can you think of any other ways to get MacGyver husband to eat more cooked vegetables?  Green salads at Love and Life at Leadora are getting pretty boring! Please feel free to let me know by leaving me a comment!

  1. I am so jelous...I never see a praying mantis here and I would really like them - darn! The zucchini looks delicious...I will definately be stealing the recipe Love the pictures - excellent.

  2. umm.. we seem to eat the same vegies all the time... squash or brocoli - jpe would eat potatoes every day if he could... i put my foot down at that (sooo many carbs).... no clue about infusing more vegies in your diet ~ but i think that zucchini sounds like a winner!

  4. Try shredding veggies into sauces and soups. For example, I shred zucchini into my marinara sauce when I make lasagna. They don't really notice since it mixes with all the other flavors. A couple of months ago, my husband suddenly noticed there was "green stuff" in his lasagna. When I told him it was zucchini, he said,"But I don't like zucchini!" Then I said, "That's funny considering you've been eating it for the last 20 years!" To which he replied, "Oh." Then resumed eating his lasagna. My kids on the other hand have either never noticed or just don't care since they love my lasagna!
